I've been loving my prior pyments, especially Lament (batch 103). We picked up some riesling concentrate from Quirky Homebrew this fall, so I was able to start another one. The rest of the juice went into Patrick's wine IPA, I'm not Drinking Any Fucking Merlot. I named this after another beloved Monty Python skit, of course.

Ingredients in this batch

  • ½ gallon RJS MiVino riesling concentrate
  • 1 lb Kirkland clover honey
  • 1 tsp LD Carlson yeast nutrient
  • ½ tsp LD Carlson yeast energizer
  • ½ pack of 1122 wine yeast
  • Denver tap water to 1 gallon

Process

I assembled this batch on 11/4. SG was 1.110. At bottling on 3/27/19, this came out at 1.022 for an ABV around 11.5%.
