Batch 215: Less of a Sigh (Tennessee Dark Wildflower Varietal)
Batches 214 and 215 use honeys from Tennessee acquired on our pre-pandemic road trip to the East Coast. I'm naming them after my defining apocalypse song, Frank Turner and Jon Snodgrass's The Fleas:
In trying to find a website for this honey farm, all I'm getting is articles about a lawsuit alleging that their honey uses a bunch of crappy filler products. Hooray.
Ingredients in this batch
- 3 lbs Tennessee dark wildflower honey from Strange Honey Farm in Del Rio, TN
- 1 g Fermaid K each at about 48 and 96 hours
- 1.5 g Fermaid O
- 1/4 pack Lalvin 71B-1122
Process
Tossed everything in a 2-gallon bucket, agitated, and pitched. SG was 1.080. I racked this batch in April or so to help it clarify.
I bottled this batch on 8/19/21. Final gravity was 0.993 for a final ABV of 11.7%. While it's just as dry as its sibling batch 214, this one was a bit more complex and interesting at bottling.
