Batch 187: Roads to the River (Wisconsin River Wildflower Varietal)
A varietal batch with an ultra floral wildflower honey we brought back from our trip through Wisconsin last spring.
I named this batch after a John Mellencamp song, off the only Mellencamp album I know or like, Human Wheels. Apparently I got the name of the song wrong; go figure.
Ingredients in this batch
- 2.5 lbs Wisconsin River wildflower honey from Mazomanie, WI
- 1/2 tsp Fermaid O
- 1/4 tsp Fermaid K
- 1/3 of a pack of Lalvin Bourgovin RC212
- Another 3-4 oz of Wisconsin River wildflower honey, added on 5/17/20 for backsweetening
Process
Mixed, aerated, pitched. SG was 1.074. Unlike batch 185, which used the rest of this pack of yeast, fermentation took right off, which leads me to believe that the high gravity of the other batch was the reason for the stalled fermentation there.
On 5/17/20, I added the remaining 3-4 oz of the original honey to backsweeten a little. I bottled this batch on 6/26/20 and didn't bother taking a gravity reading. It didn't come out quite as clear as I'd like, but I still adore this honey.
