This batch is made with a beautiful, dark desert wildflower honey we picked up at Santa Fe Honey Salon this spring. It's named after an Oppenheimer Analysis song about nuclear war, off the album New Mexico.

Ingredients in this batch

  • 45.9 oz Santa Fe desert wildflower honey
  • 1/2 tsp Carlson yeast energizer
  • 2 tsp Carlson yeast nutrient
  • 1/3 pack Lalvin 71B 1122

Process

Mixed, aerated, pitched. SG was 1.112. This came out super dry; when I bottled on 11/13, FG was 0.992, which puts the ABV around 15.75%. The honey is complex and lovely.
