Not really an acerglyn: the syrup it uses is not maple syrup.

Ingredients in this batch

  • 2 lb., 8 oz. star thistle honey from Sleeping Bear Farms.
  • untreated tap water to just over 1 gallon.
  • ⅜ tsp. Fermaid K.
  • ¾ tsp. Fermaid O.
  • ⅓ vial Inland Island INIS-003 (Colorado IPA) ale yeast, split with batches 158 and 160.
  • 1 tsp. Fermaid O, added on 11 April 2019.
  • 10.1 oz. huckleberry syrup (apparently simple syrup with huckleberries and perhaps huckleberry juice, or perhaps boiled-down huckleberry juice, but it doesn't taste like there's maple syrup in it) from the Idaho City Trading Post, added on 4 June 2019.
  • clarifying addition of 3 May 2020:
    • ⅕ pouch A1 of Durafine clarifier
    • ⅕ pouch A2 of Durafine clarifier
  • 5.8 oz. maple syrup from Doo-Little Syrup, Waupaca, Wisconsin, added 5 Apr 2020.

Procedure

Measured honey into waer, then added Fermaid O and K, then water to just over a gallon. Agitated intermittently and repeatedly for over an hour while other batches were being prepared, then measured the gravity. Pitched yeast at 74℉.

Brew date: 5 April 2019.
Original gravity: 1.095.
Bottling date: 17 October 2017
Final gravity: 1.013.
Estimated ABV: Approx. 11.7%.

Yield: TBD; hopefully, about a gallon.

  • ~6 oz. hydrometer slop

Total: approx. 124 fl. oz., or almost exactly one gallon.

Observations

  • 2019-04-11: Made a late nutrient addition to the carboy.
  • 2019-06-04T19:00: Added some huckleberry syrup, filling the carboy to the middle of the neck.
  • 2019-06-04T21:00: Huckleberries have already expanded, pushing themselves up into the airlock. Re-sanitized airlock, scooped out huckleberries with the sanitized handle of a spoon, and covered with paper towels and a rubber band. Cleaned out more huckleberries from the neck several times over the next few hours, then popped an airlock back in around 2 a.m.
  • 2012-04-05: Added more maple syrup to the carboy.
  • 2020-05-03T14:00: Added one-fifth pouch of each pouch of Durafine.
  • 2020-05-17: Bottled, yielding just under a gallon of 11.7% mead.
