We made a trip back to SoCal in August and visited one of our favorite honey vendors, Bennett's in Fillmore. I'm doing a series of varietal meads to showcase the wonderful honeys we got from these fabulous folks.

Full disclosure: The name of this batch isn't a clever pun but the result of not being able to come up with a name. I finally turned to our box of Cards Against Humanity cards to come up with something, and, well, this was one of not that many that I could still picture giving someone a bottle of without embarrassing myself too badly.

Ingredients in this batch

  • 2.75 lbs Bennett's knapweed honey
  • 1 tsp yeast nutrient
  • ½ tsp yeast energizer
  • ⅓ batch Lalvin 1122 yeast, rehydrated

Process

Mixed this up on 8/21 with an SG of 1.100. Bottled on 2/10/19 with FG at 1.022 for a 10.2% ABV.
