This mead uses a lovely, sweet alfalfa honey from Beekeeper's Honey Boutique in Salida. I'm playing with another new yeast here, Red Star Premier Blanc champagne yeast. Once primary is over, I added rose petals and juniper berries. This was named for one of my favorite songs from Dutch electro-folk-blues band My Baby, Out on Gin.

Ingredients in this batch

  • 2.5 lbs Beekeeper's Honey Boutique alfalfa honey
  • 1 whole pack Red Star Premier Blanc yeast, rehydrated
  • ⅛ tsp yeast nutrient
  • 3 pinches Penzey's juniper berries
  • ¼ oz+ Imperial rose petals
  • Denver tap water to 1 gallon

Process

Starting gravity was 1.090. With a whole pack of yeast, this started fermenting quickly and got very hazy. On 8/26, I added a generous quarter ounce of Imperial rose petals and two pinches of Penzey's juniper berries. When tasting the mead on 9/9, it was very dry, with a nice amount of rose and not enough juniper, so I dropped in some more of the latter. I added another pinch on 10/7.

I bottled this batch on 10/13. Final gravity came in at 0.998 for a 12% ABV. I plan to let this one sit and develop for a while.
