One more varietal resulting from our grand road trip this spring. I already knew I loved mesquite honey, so I was delighted to grab a pound and a half from another stand at a tiny farmers' market in Lubbock, TX.

Ingredients in this batch

  • 1.5 lbs mesquite honey from Juicy Lucy's Veggies in Lubbock, TX
  • 18.2 oz Trader Joe's Mostly Mesquite honey
  • 8 oz Trader Joe's Mostly Mesquite honey, added on 7/16 for backsweetening
  • ⅛ tsp Wyeast yeast nutrient, plus scant ½ tsp on 5/18
  • Denver tap water to 1 gallon
  • ½ pack of Lalvin 71B-1122 wine yeast

Process

Starting gravity was 1.086. This batch fermented completely dry and tasted rather disappointing by July, so I tossed in another 8 oz of mesquite honey to restore some of the character.

I bottled this batch on 8/5 with a final gravity of 1.036 and a calculated SG of 1.106, for an abv around 9.2%.
