This is a madrone thistle varietal using honey picked up at a farm stand in Half Moon Bay. For some reason I seem to associate madrone with witches, so while I haven't read a Pratchett book in many years, I named this for the Lancre coven from the Discworld series.

Ingredients in this batch

  • 2 lbs Cervenka madrone thistle honey
  • 8 oz Kirkland clover honey
  • 1 ½ tsp yeast nutrient, added in three 1/2-tsp increments
  • ⅛ tsp Fermaid K
  • Filtered water to just over 1 gallon
  • ½ batch of Lalvin 71B-1122 yeast, split with Batch 074

Process

I failed summarily at getting the honey to mix into the must properly here. It seems to be fermenting OK the next day, but there's an inch-thick layer of honey at the bottom despite my best attempts.
