I like kombucha, but I don't drink a lot of it. I briefly owned a SCOBY when we lived in California but soon lost it to inactivity. After one initial batch, this one, too, sat in the fridge until it could practically do algebra and was thus discarded. I'll pick it up again sometime.

Ingredients in this batch

  • 6 black tea bags, steeped in 1 quart of boiled water for 6 minutes
  • 1 cup white sugar
  • 3 additional quarts of Saint Paul tap water for a 1-gallon total
  • 1 Oregon Kombucha SCOBY

Process

Made the tea, mixed with sugar and additional water, and added the SCOBY. Generally followed the directions on the package but didn't type them up. The kombucha came out pleasant enough.
