This is a reconstructed recipe, since Brewtarget silently dumped my notes before I had a chance to type them up. Sigh.

Like many brews we're dealing with during the pandemic quarantine, I'm taking a name for this batch from Warren Zevon's Splendid Isolation. This particular batch, a gingersnap-flavored tripel-style braggot, is I Don't Want to Hear Them Scream. It's based on Strict Observance Tripel in Jamil Zainasheff' and John H. Palmer's Brewing Classic Styles.

Ingredients

  • 14 lb. continental Pilsener malt
  • 4 oz. aromatic malt
  • 4 oz. Tetnang hop pellets at 60 minutes.
  • 2 oz. Czech Saaz hop pellets at 10 minutes.
  • 1 pouch White Labs WLP570, Belgian Golden Strong.
  • Juice from 1 lb., 7.3 oz. ginger root, frozen, then dumped into the fermenting brew on 2 August 2020.
  • 3 lb. Ziegler's (uniquely Southern) Georgia wildflower honey, added to the bucket on 6 August 2020.
  • 3 lb. Sweetwater Creek Honey Farm summer berry honey, added to the bucket on 6 August 2020.
  • 3 oz. Czech Saaz hop pellets, added to the bucket on 17 October 2020.
  • 3 lb. Sweetwater Creek Honey Farm summer berry honey, added to the bucket on 26 October 2020.

Procedure

Mashed in a grain bag in the ten-gallon brewing pot. Mashed ninety minutes at 149℉, then drained and sparged and boiled for ninety minutes, starting timer only after the hot break, adding hops and molasses at ninety minutes; chilled with the wort chiller, aerated by pouring through the straining sieve, and aerated more, repeatedly, by beating the surface with a wire whisk. Let sit to aerate for an hour, whipping several times with whisk, then pitched the yeast and popped in an airlock.

Yield:

  • 24 x 12 oz. beer bottles
  • 12 x 22 oz. beer bottles

Total: Approx. 550 fl. oz., or 4⅜ gallons.

Observations

  • 2020-08-02: Added ginger juice to the fermenting brew as primary continues to taper off..
  • 2020-08-06: Added six pounds of honey to the fermenting brew.
  • 2020-08-17: Added dry hops to the bucket.
  • 2020-10-26: Added three more pounds of honey while racking the brew to a new sanitized bucket.
  • 2020-11-05: Bottled.
