Putting all two and a quarter ounces of hops we farmed this year into one beer, a double IPA modeled on Russian River's Pliny the Elder, based on Mitch Steele's IPA: Brewing Techniques, Recipes and the Evolution of India Pale Ale. I'm going to call this batch Harvest Pliny until a better name becomes apparent.

Ingredients

  • 11.00 lb. Briess - 2 Row Brewers Malt
  • 0.40 lb. Simpsons - Crystal Medium
  • 0.40 lb. Briess - Carapils Malt
  • 1.00 lb. Sugar, Table (Sucrose)
  • 1.00 oz. Arcadian hops (9.8% A.A.) at 90 min.
  • 1.00 oz. Centennial hops (10.5% A.A.) at 120 min.
  • 0.25 oz. Centennial hops (10.5% A.A.) at 30 min.
  • 1 pouch White Labs WLP051—California Ale V yeast.
  • 3 tsp. powdered gypsum, to adjust water chemistry by lowering pH.
  • Addition of 29 Nov 2022:
    • 5.2 oz. cane sugar, for priming.

Procedure

Mashed for ninety minutes in the ten-gallon brewpot, during which time the temperature fell from 152℉ to 149℉. Boiled for two and a half hours, adding sugar at the end of the boil. Cooled, then poured through a sieve into a sanitized bucket, whipped the surface with a wire whisk. Pitched the yeast and popped a lid on the bucket.

Post-boil volume is four gallons.
