  • 1 lb., 9.2 oz. honey from Bee Happy Honey, Minnesota.
  • 1 oz. Apollo hops (18.1% A.A.) at 90 min.
  • 1 oz. Apollo hops (18.1% A.A.) at 60 min.
  • 1 oz. Citra hops (13.2% A.A.) at 60 min.
  • 1 oz. Amarillo hops (8.5% A.A.) at 45 min.
  • 2 oz. Lemondrop hops (5.1% A.A.) at 30 min.
  • 1 oz. Citra hops (12.3% A.A.) at 30 min.
  • 2 oz. Lemondrop hops (5.2% A.A.) at 20 min.
  • 1 oz. Lemondrop hops (5.1% A.A.) at 10 min.
  • 1 oz. Mandarina Bavaria hops (7.3% A.A.) at 10 min.
  • 1 pouch White Labs WLP001 - California Ale Yeast
  • Addition of 20 Aug 2022:
    • 1 oz. Citra hop pellets from Northern Brewer (12.6% alpha acid)
    • 1 oz. Lemondrop hop pellets from Northern Brewer (5.1% alpha acid)
    • 1 oz. Mandarina Bavaria hop pellets from Austin Homebrew (6.5% alpha acid)
  • Addition of 12 Nov:
    • 2 oz. Lemondrop hop pellets from LD Carlson (5.2% alpha acid)

Procedure

Sparged the grain from bath 225 again. Gravity was only 1.020, so I added sugar and honey. Boiled for 120 minutes, starting timer only after the hot break, adding hops at 90, 60, 45, 30, 20, and 10 minutes; chilled with the wort chiller, aerated by pouring through the straining sieve into a six-gallon bucket.Aerated more, repeatedly, by beating the surface with a wire whisk. Let sit to aerate for an hour, whipping several times with whisk, then pitched the yeast and popped in an airlock.
